Another salad victory! AKA: another salad that Lance happily woofed down as an entire meal. Remember the last one? Oh, and did I mention that the ranch is homemade and dairy free? I’m on a roll here so of course I had to share! 🙂
How’s everyone’s week going? Lance and I decided to jump on the Game of Thrones bandwagon so that’s sucked up pretty much all of our free time this week.
After both of our Facebook newsfeeds were flooded a few weeks ago with devastated statuses about the season finale, we finally decided to bite the bullet and watch. The verdict? It’s shocking and obscene but we’re completely addicted!
By the end of the weekend, I’m sure we’ll be finished with all three seasons and will then suffer the post-show/book “What am I going to do with my life now?” depression that always ensues. That’s the worst, isn’t it?! I sunk into a deep hole after finishing the Harry Potter series…
I did manage to leave Game of Thrones long enough to meet my friend Jonathan for lunch. Jonathan is a notoriously “safe” orderer at restaurants and in an effort to to change this, he bravely had me pick the restaurant and order for us both!
Not. A. Problem! 😉 We had a wonderful lunch at Le Pain Quotidien. The weather was absolutely gorgeous so we enjoyed our lunch in their outdoor seating – it was a perfect afternoon!
I loved this little spot because the entire menu was 100% organic, fresh, and loaded with veg-friendly options. We ended up ordering 2 entrees and sharing them both, mainly because I’m so indecisive!
We got in all our Omega 3’s and 6’s with the Omega Tartine. It was awesome and so filling!
And oh, the quinoa cake was to die for! Seriously, I’m going to work on recreating this asap! The marinara sauce and corn were creative additions and they went surprisingly well together.
Lance and I also made a trip to the Kennedy Center on Saturday. Last year, Lance bought a pack of tickets to 3 shows throughout 2013 and this was the second one we attended. We saw The Guardsman, which neither of us knew anything about. In fact, we expected it to be a musical and it was actually a play.
It was actually really entertaining and a wonderful night overall. We are always saying that we need to take advantage of being right outside of DC so it’s nice when we do! We definitely couldn’t have picked a better night either. We got to enjoy this lovely view while we sipped red wine and sat by the fountains.
I think the pack of tickets is a great idea because the dates are set so we can’t let excuses and life get in the way. We’re excited to see Book of Mormon there next month!
After getting our fill of classyness, we blasted 80’s rock music all the way home, picked up a pizza (minus the cheese), and dove into a Game of Thrones marathon. The perfect end to a date if you ask me! 😉
Summer BBQ Salad
- 4 cups leafy greens of choice (I used a spring mix)
- 2/3 cup black beans
- 2/3 cup corn kernels (I used frozen since they were non-GMO)
- 1/2 red onion, chopped
- 2/3 cup quartered grape tomatoes
- 2 bell peppers (I used green & red)
- 1/2 an avocado, in slices
- 4 tablespoons BBQ sauce of choice (I used Annie’s Spicy & Sweet)
- 4 tablespoons Susan’s Dairy Free Ranch
Spread the leafy greens out over two plates. Display the toppings on top, dividing evenly between the two. Drizzle the BBQ sauce and ranch over the salads just before serving.
